Sunday was another big cooking day for me! Have I told you lately how much I LOVE my new Spiralizer? I have bought three of these for gifts and turned numerous other people on to buying them for themselves. I sure wish I had stock in the company. Above you see a spirialized yellow onion which will be one layer in the Mushroom-Basil Au Gratin dish from Cathy Fisher over at Forks Over Knives website.This is my second time making it.
And this is how the potatoes look spirialized with the single blade attachment too.
And here it is all layered with mushrooms and fresh basil and cashew sauce before it goes into the oven. You can find the recipe at Forks Over Knives.
The next dish is called "Minty-Lemon Lentils with Spinach". It's in the Forks Over Knives cook book. It's on page 147 and is by Ann Crile Esselstyn. And it is delicious. Red lentils, red potatoes, spinach, lemon juice, fresh mint just some of the tasty ingredients.
I cooked both of these dishes and then separate them into bags of one meal portions which I vacuum seal with the Food Saver (from Costco) and freeze until ready to eat. This way I have a variety of meals in my refrigerator to choose from on a given day.
And now my UPDATE on ME, the result of eating Vegan on my eighth month! The light blue jeans are size twelve (12) and what I was wearing last April. The dark blue jeans are size six (6).
I recently bought size eight jeans and find them to be very, very comfortable. But both my husband and my daughter-in-law told me they still looked too big on me. So DIL GAVE me a brand new pair of size six jeans out of her closet that she was waiting to have hemmed. I brought them home and hemmed them myself for me. They fit. Thank you Jackie. I'm still more comfortable in the size 8s. Maybe I need time to psychologically accept that I am a size six. This is all happening so fast.
I'll let you know when I am comfortable in the dark blue jeans.
In the meantime, I will continue to eat vegan (for the rest of my life) and enjoy the hardiness of the meals that sustain me well. My weight continues to go down slowly. Today there are 22 pounds less of me than there were in April 2013.
