organic cranberries ready to boil
Before Thanksgiving I made up a new dish by combining my previously roasted and vacuum packed/frozen vegetables:
Yam, zucchini, yellow onion, cauliflower, garlic, with herbs of rosemary, thyme.
I stir fried them in a dollop of olive oil with some previously made Ferro, a whole grain with a bready whole wheat taste.
I added freshly cooked organic cranberries. If this did not taste like Thanksgiving I don't know what does. I only wish in hindsight that I had added some roasted chestnuts or walnuts to the mix. That would have been a delicious finishing touch and would have brought back mom's/and my old stuffing for the bird recipe. (I of course no longer eat the bird).
That's one turkey who did not have to worry around the holidays this year!
A delicious vegan dinner with a holiday flavor all it's own.
Since the vegetables were precooked and frozen by me several days earlier, (15 minutes prep and cooking time); the Ferro and cranberries took about 15 minutes to make on this day. Stir frying them all together took another 5-8 minutes.
Eating Vegan does not take a lot of prep time, especially if you prep a lot of it at earlier times.
